“Melanoidin” is a black component of black vinegar  That is what it is.

As it matures in a turtle jar,amino acids are secreted and melanoidin is produced by the reaction of  amino acid with reducing sugar.

This produces amber black vinegar.

Black vinegar is the color of ripening.

As it matrures,the color 

becomes darker and the taste becomes mellow among the bottles I bought.
